What's Cookin' Good Lookin'!


I've joined in a blog hop {of sorts} about cooking! This Life Of Ours has begun a linky for recipe sharing! She has committed to trying all the recipes listed (if listed on time) and at any time you may go check out the recipes and try them out. I know I could use a bit of a spruce up in the kitchen area! How about you??

My recipe was handed down to me from my cousin, who has three young babies and at least one picky eater on her hands. This is kid {and husband} friendly!

This meal good warmed up!

For just Daddy "S" and I, one chicken breast is enough so I will write it that way, but if you will be cooking for more than two I'd make at least 2 chicken breasts.

Barbecue Italian Chicken

Ingredients:
* 1 boneless, skinless chicken breast (cut into nugget-sized pieces)
* 1 regular-size container Barbecue sauce (your favorite flavor...we use Original because Honey was too sweet)
* Italian-style bread crumbs

Directions:
* pre-heat oven to 375*
* Cover a large cookie tray with foil
* Coat each chicken piece with barbecue sauce and lay on the covered cookie tray. (I usually do this by putting some barbecue sauce in a bowl and using my [clean] fingers to dip the chicken piece in and swishing it until it is thoroughly coated).
* Sprinkle breadcrumbs over chicken pieces.
* Flip chicken pieces over and sprinkle this side with breadcrumbs. (ie: all chicken pieces should be totally covered in bbq sauce and then Italian breadcrumbs).
* Cook 12 minutes or until done.
** Once cooked, I generally cut a few of the larger pieces in half just to make sure that they are cooked through

Serve:
* We serve these with the leftover barbecue sauce and ranch dressing for dipping purposes.
* Yummy side dishes include corn, peas, egg noodles with butter and Parmesan cheese, au-gratin potatoes, or baked potatoes.
